I'm Gabriella Eva Pirisi, from Sydney, Australia. I am also the founder and pastry chef of the brand, MadCharlotte.
My path to MadCharlotte began unexpectedly. I came to Paris in 2009 seeking fashion design schools wanting to learn the art of couture. However, I found something that interested me much more, pastries! French pastries to me were like another form of couture and I became obssessed on figuring out how certain elements of pastries were created, not only that, I discovered new natural flavours such as rose, violet, jasmine, just to name a few that were assembled with seasonal fruits. Textures, flavours and esthetics of French pastries just blew my mind and my tastebuds!
Fashion school brochures were quickly replaced by pastry school ones, and it was decided, I will enrol into the international intensive pastry program at the renowned school of gastronomy, FERRANDI, Paris. The next step was to complete the CAP Patissier exam to gain a French specific diploma needed to make and sell pastries in France. On top of this, there was internship experience at various establishments, more of which you can read over on my personal blog,
Like couture, pastry is built on fundamental skills, and as these skills are practiced and perfected, the creativity of the artisan begins to evolve. MadCharlotte's presence on social media platforms like Instagram and Facebook opens a connection with a global audience to this creativity and skill. The savoir-faire of French pastry intrigues and delights people all around the world, and it's a wonderful way to share a common interest.
