Since graduating from pastry school (Ferrandi class of 2013) I've been selling my dessert creations via word of mouth getting gigs for corporate events mainly. So far I've been happy paddeling along, parallel I post regularly on Instagram as a way of journaling my work. This has created a growing following and as a consequence a growing demand.
Up until recently, the only way you could access MadCharlotte was by placing a minimum order. The idea of my business originally was to cator for corporates who want to add some luxury to their presentations when hosting important meetings, particularly when clients need to be impressed. This has not changed. However, I have moved MadCharlotte into Phase 2.
In December of 2017 I was contacted by the lovely Pauline, new comer to Versailles and owner of the recent tea room, Salon sur Cour. She was looking to collaborate with a pastry chef who inhabits a little of the same universe as her own. That is, pretty things, fresh branding, feminine and possibly located in Versailles. So here we are.
Fridays, Saturdays and Sundays you can find a collection of MadCharlottedesserts at Salon sur Cour. Take pleasure in ordering tea and dessert, settle in and get cosy. I can assure you you'll also take pleasure in the actual space itself. Interior designed by Caroline Tissier, known particularly for fitting out some of the most renowned restaurants in Paris, plus the famed Michelin restaurant, La Table du 11 in Versailles, who is Salon sur Cours next door neighbour.
Salon sur Cour is only meters from the entrance to the Palace of Versailles (Chateau de Versailles). Viewing from the Palace gates you can see an arch marked "Cour des Senteurs", and on the attached building written MAISON DES PARFUMS. Here tucked away, once you pass under the arch, you'll find Salon sur Cour tea room.
